Tasting notes: Light, easy-drinking Furmint from Slovenia, with the grape's trademark aromatics. Lean white fruit and citrus are predominant, balanced with crisp minerals. Clean and subtle, this is a great alternative to the usual Hungarian expressions of Furmint.
Food pairing: Salads, meaty fish, grilled white meat, Creamy pasta, smoked salmon, garlic chicken, risotto, or falafel burgers with green leaf salad and cherry tomatoes.
Cheese pairing: Creamy hard cheese like Asiago, Comte, or Gruyere.
Winemaking: Low sulfur. A new wine from winemaker Matija Žerjav, simply known as Matic to his friends. "A Love Story In 3 Acts" is a celebration of the local rivers and layers of rock that influence the vines, and the maturation that follows. Made from grapes harvested from 50-year-old vines in the early morning so they are cold and retain their ripe fruit character. They are gently pressed and left on the skins for 36 hours to add body and structure before being fermented in stainless steel tank with wild yeast. The wine is finally lees-aged for 6 months.
