This mildly funky rich cheese is traditionally eaten with champagne. The rind is given it's wrinkly appearance from the introduction of Geotrichum candidum, which isn't traditionally used with cow's milk . Although it isn't technically a washed rind it picks up the brevibacterium from aging in the same caves as other washed rinds.
