The 2018 Baron von Verm was hand harvested and divided into two lots: half of the fruit was whole cluster pressed to neutral 500L puncheon, and the other half was destemmed and fermented under a submerged cap for two weeks. As is our custom at RHV, the fermentation was achieved with native yeast. After 20 months of elevage the two lots were combined bottled unfined and unfiltered on February 20, 2019. The 2018 Baron von Verm received no additions of any kind save for minimal effective sulfur, and will age beautifully for at least a decade and a half.
