While variations on Emmental can be bought as generic swiss cheese, this cheese is anything but generic. No more than 5% of all AOP Emmentaler can be aged to Surchoix (12 months) or older. This milder cheese is a great melter and is a primary ingredient in fondue. A historic sandwich topper is equally good cubed in a salad or with apple slices. The taste is nutty with a lactic sweetness.
