Still quite closed, this wine already shows complexity. Aromas of Kumquat, blood orange and stone fruit, brioche and truffles as well a delicate herbal note. Slightly smoky with the very expressive minerality typical for the Doctor.
Vinification- The grapes have been handpicked and carefully selected in the various areas of the vineyard. They were only slightly squeezed and then left for 24 hours to macerate before being gently pressed. The wine has been fermented without any addition of cultured yeast or enzymes for a period of four till five month. After the fermentation was completed, it was left to mature for several more months on the lees in order to gain more stability and complexity.
