Localization: Cote Chalonnaise, Burgundy, France
Tasting Notes: It is made from 100% Chardonnay, which is really allowed to fill in the mouth. Its primary tones are with shades of peach, nectarine, and citrus. It leaves undertones in the long finish of pear, apples, and a hint of almond.
Food pairing: With its nose with brioche and fresh notes reminiscent of lime, its slightly saline mouth, try exotic pairings: Grilled pork ribs with honey, Duck with Orange or Chicken with Lemon confit, Chicken or Lamb Curry or even Turkey, the perfect Thanksgiving wine.
The Domain: The estate includes 8 hectares of vineyards, spread at the foot of Solutré rock and Prissé, where David Fagot produces the appellations Pouilly Fuissé, Saint Véran and Mâcon Villages.
In the cellar they work with neutral yeasts, aging on fine lees to clarify the wine's aromas and using barrels to give intensity.
