Tasting Notes: Straw gold color with green reflections, a luminous, crystalline wine. On the nose an elegant and refined approach with notes of peach, pear, acacia and honeysuckle. The palate picks up on this spring basket to marry it with exotic fruits (mango, lychee) with a touch of salinity on the finish, very typical of the terroir. It is a very flattering and greedy wine.
Food pairing: Very pleasant at the start of a meal, it is an excellent accompaniment to seafood dishes: scallops with mango emulsion, rolled sea bass with curry.
The Domain: Gilles and Séverin Chollet, winegrowers from father to son, own an estate of more than 12 and a half hectares in 2 towns in Nivernaise.
For more than 60 years, the Chollet estate has succeeded in making a name for itself among the greatest wines of the Val-de-Loire:

Located just 200 km south of Paris, our vines benefit from clay-limestone and sandy soils which give our wines elegance, finesse and a fruity sensation in the mouth.
Concerned about the environment and a new more ecological mode of cultivation, the Domaine Chollet in Pouilly-sur-Loire (58) wishes to turn to organic farming gradually.
The actors of the great turning point in the history of the Chollet family were Roland Chollet and his wife Simone. Starting from nothing, they created the Domaine Chollet to produce their own wine in Pouilly-sur-Loire (58) .
It was in 1960 that the first nectar appeared at Le Bouchot for the Chollet family. Developed with the greatest respect for the terroir, it obtains great wines from Pouilly (58) . Thanks to this, Roland won a lot of competitions: not far from 15 medals
(5 Gold, 10 Silver, 5 Bronze) at the Concours Général de Paris and Macon in 20 years.
Then in 1980, Gilles Chollet, his son, joined him at his side. Father and son discovered new terroirs, acquired land and enlarged the wine estate in Nièvre (58) with the vigilance of always doing well.
After 1989, Simone and Roland were taken away by illness prematurely. They left Gilles and his wife Valérie in this delicate situation. But they were able to bounce back with courage and thus perpetuate the family business .
