History: Dashe Cellars Zinfandel Vineyard Select is a blend of a few of our favorite small-production vineyards in the Dry Creek Valley (Sonoma County), Contra Costa county, and Clarksburg CA. This is a remarkably lush, drinkable Zinfandel that weâ€™ve blended with a few â€œspice rackâ€ varietals to add depth, spice and texture to the wine. Weâ€™ve intentionally created this wine as a bistro wine, made to pair beautifully with a wide range of foods and flavors. Made primarily of Zinfandel, we also blended the wine with the varietals Teroldego and Petite Sirah, to create a juicy, rich, mouth-filling wine that shows round texture and a long, spicy finish.
Production: We fermented each varietal of the wine sepa- rately, using the native yeasts resident on the grape skins. The wine was aged for a total of 14 months in French oal barrels. 100% of which were 1-year or older oak, since we prefer the flavor of the fruit to be clear. As we blended the wine, we realized that many vineyards contributed individual varietals as a â€œspice-rackâ€ of flavors, bringing bright fruit and complexity to the blend. The resulting wine absolutley bowled us over with its rich texture and depth of flavor. Itâ€™s a perfect wine to compliment a wide range of foods â€”from lighter fare, to pastas, to grilled meats and rich stews.
Aroma: Very aromatic pomegranate, black cherry, and raspberry, mixed with hints of cassis, chocolate, and slight peppery spice.
Taste: Lush, lively texture with lovely black cherry and pomegranate fruit, bright acidity to balance the sweet fruit flavors, black pep- per and clove spice, and a long, lively finish of black cherry, pomegranate, and hints of licorice and cocoa powder.
