Timut pepper is a “fake pepper” native to Nepal. It is a cousin of the “pepper” of Szechuan. The “Zanthoxylum” family, which is very fashionable in kitchens today, actually has hundreds of parents. The grains are smaller than those of Szechuan and dark, brown-black in color. It gives off a sumptuous fragrance that spontaneously evokes lantana flower and grapefruit. This characteristic and obvious smell makes it nicknamed “grapefruit pepper”. We then discover very fruity notes with incredible touches of passionfruit and a festival of citrus, orange, lemon and grapefruit.
