Tasting Notes: The young vines Taillepieds contains a higher proportion of limestone and produces a wine of dark color, powerful mid-palate and long finish.   The acidity levels are relatively high which adds to its ageability.

Aromatically ripe yet cool with its elegant and pure aromas of red and blue pinot fruit that possess a lovely array of spice and floral elements. The refined and equally pure mouthfeel is similar to that of the Carelle in that it's super-sleek and beautifully well-detailed while exuding an attractive minerality on the succulent but firm finale that confirms that this will need a decade plus of cellaring to realize its fully potential. Food Pairing: As with our other reds, it is best to serve this wine between 15 - 16 C/59 -61 F. Ideal pairings include beef and game that have rich sauces. Cheese such as epoisse, Chambertin, or Brillat-Savarin complement this wine.

The Domain: Together with Coralie Allexant-Maniere, our technical director, and Frédéric Gaillard, our vineyard manager, we share the vision of organic viticulture and biodynamic practices with the goal of producing the best expression of terroir inherent in each tiny parcel.  Our total production for all vineyards combined is about 1500 cases in an average year.

My passion for this project and commitment to the highest quality wines is unending.  When one intertwines the rhythm of the vintages spawned from a particular terroir with the concurrent turbulent cycles of society, a fascinating temporal tapestry of Western Culture emerges.  Who would not leap at the chance to be a small part of such tradition?
