While traditionally Selles-sur-cher must be made with raw milk to claim the name, this "Chevre" from P. Jacquin & FIls' will satisfy any craving you built up that summer you spent in Paris. While not identical to its namesake, we think you'll be hard pressed to tell the difference.
Until US law changes regarding raw milk sales (sooner than later we hope, trust me) we think these delicate little ashed discs are as close as we're going to get. Bright and tangy, smooth and creamy and balanced with a perfect amount of "goat-y" funk, this Chevre is always excellent and highly versatile when in your pantry.
