After the success of the Brebirousse and Vacherousse cheeses and the promising start of the Bufflonne d'Argental, Fromi's Meister Affineur, Vincent Christophe, decided to develop a new cheese: the Bufflonne Rousse, made from fresh whole buffalo milk.
After salting, the rind is carefully washed off with salt water and lightly colored with natural annatto, giving the cheese a slightly orange color. It is then covered with a fine fluff of white geotrichum to allow the mildness, creaminess and natural richness of the buffalo milk to shine. The slightly sour taste will delight any palate!
