A cheese of monastic tradition, it has the character of an abbey cheese, it is matured for 4 weeks.

Organic goat's milk gives the cheeses a mixture of perfumes and aromas, the basis of this subtle flavor specific to goat products. The color of its rind results from the numerous care given to it and the specific atmosphere of the maturing cellars.
