After ripening for 4 months, Smeraldo is slowly infused with white Piemont white truffles (Tuber Magnatum Pico, 5%), visible in the veins of the cheese. During its maturation the white veins tend to get darker but the white truffle flavor remains intact. This is a handcrafted cheese which makes every wheel unique with its own color, shape and weight.
