Tasting Notes: Well-defined black cherry and blackberry flavors are shaded by notes of rosemary, eucalyptus, iron and tobacco in this firm and complex red, which shows lovely balance and grip on the lingering aftertaste. 

Food pairing: Braised or grilled beef, veal, or pork; a hearty stew filled with fresh herbs and lamb; meaty pizza; tomato-based dishes and lots of mushrooms; rich platters of foie gras, pâté, and older pecorino cheese.

The Domain: "Legit" grew in Tolaini’s densely planted, southeast-facing, gravel and limestone clay-soils of San Giovanni Vineyard in Tuscany’s Chianti Classico zone near Castelnuovo Berardenga. The fruit was hand sorted in the vineyard and sorted by an optical sorter at the winery.
Winemaker Francesco Rosi destemmed the fruit and put the whole berries into temperature-controlled French oak fermenters. The must stays in contact with the skins for 30 days. He used manual pigeage (submerging the cap)  and remontage (pumping over of the juice), performed 4-6 times daily, and delestage (taking the juice off the lees and putting it into a fresh tank) weekly to extract deep color and complex flavor. Next, he racked the wine to French oak barriques, 70% new and 30% once used, for malolactic fermentation and barrel-aging for 24 months. Finally, he aged the wine in the bottle until it was three years old before release.

To give this Cabernet Sauvignon a bold look it deserves, Tolaini got permission from the great Thelonious Monk’s family to use his eternally cool and undeniably “legit” image from the 1962 album Thelonious Monk in Italy. This wine is a fantast gift for jazz fans and anyone who loves Cabernet or Italian wine.
